Pizza Hut Original Pan Pizza

Again-thanks Mardi!

1 1/3 cups Warm water (105F)

1/4 cup Non−fat dry milk

1/2 teas. Salt

4 cups Flour

1 Tbls. Sugar

1 pk. Dry yeast

2 Tbls. Vegetable oil (for dough)

9 Oz. Vegetable oil (3 oz. per pan)

Butter flavored Pam

Put yeast, sugar, salt, and dry milk in a large (2 qt.) bowl. Add water and stir to mix well. Allow to sit for two minutes. Add oil and stir again. Add flour and stir until dough forms and flour is absorbed. Turn out on to a flat surface and knead for about 10 minutes.

Divide dough into three balls. In three 9" cake pans, put 3 Oz. of oil in each making sure it is spread evenly. Using a rolling pin, roll out each dough ball to about a 9" circle. Place in cake pans. Spray the outter edge of dough with Pam. Cover with a plate. Place in warm area and allow to rise for 1 to 1 1/2 hours.

Sauce:

1 8 Ounce Can Tomato Sauce

1 Teaspoon Dry Oregano

1/2 Teaspoon Marjoram

1/2 Teaspoon Dry Basil

1/2 Teaspoon Garlic salt

Combine and let sit for 1 hour.

For Each Nine Inch Pizza:

1. Preheat oven to 475F

2. Spoon 1/3 cup sauce on dough and spread to within 1" of edge.

3. Distribute 1 1/2 Oz. shredded mozzarella cheese on sauce.

4. Place toppings of your choice in this order:

Pepperoni or Ham

Vegetables

Meats (cooked ground sausage or beef)

5. Top with 3 Oz. mozzarella cheese

6. Cook until cheese is bubbling and outer crust is brown

Creamy Cilantro Tomatillo Dressing

1 package dry Ranch dressing

¼ cup milk

1 cup mayonnaise

1/3 cup buttermilk

½ cup cilantro

1 garlic clove

3 tomatillos (skin off)

½ tsp of cayenne pepper

Put all ingredients into a blender. Chill before serving and it will thicken.

3 cups rice

5 cups water

3 cubes chicken bouillon

1 Tbs. butter

¼ minced onion

½ tsp onion salt

2 tsp minced garlic

½ tsp garlic powder

½ cup cilantro chopped

¾ can of diced green chilies

½ tsp salt

Saute onion and garlic with the butter until the onion is soft. Add the rice and water and all other ingredients and bring to a boil. Reduce heat to low, cover with lid, and simmer for about 15-20 minutes.

Café Rio Sweet Pork

2 ½ lbs Pork Roast

1 ½ cup brown suger

1 ½ cup salsa

1- 12 oz can of Coke

(just do equal parts of brown sugar and salsa- however mush you think you need/want)

Put pork in Crock-Pot and pour mixture over it. Cook it on low for 7 hours (or until meat is cooked). Shred pork and cook an additional 30 min minimum. The pork will absorb all the juices.

Café Rio Shredded Chicken

1 small bottle Kraft Zesty Italian Dressing
1 T chili powder
1 T cumin
3 cloves garlic—minced
5 lbs chicken breast

Mix the dressing, garlic and seasonings. Pour over chicken. Cook in Crock-Pot for 4 hours on high, shred meat and cook 1 additional hour.

Mardi’s Low-Fat Mint Chocolate Chip Ice Cream

½ pint of low-fat milk (8 ounces)

3 ounces of sugar (6 Tablespoons)

½ pint whipping cream

1 tsp peppermint extract

2-3 drops of green food coloring

5 ounces of chocolate- chopped into fine little chips

On low heat in a medium sauce pan, scald milk and sugar together. Set to the side and let cool. When completely cooled, add whipping cream, peppermint and food coloring. Pour into ice cream maker. After ice cream has thicken a little, add chocolate chips.

Easy Homemade Bread

Ingredients:

1 tablespoon dry active yeast

2 cups water warm

1 tablespoon sugar

¼ teaspoon salt

5 ½ cups all purpose flour

Directions:

In a large bowl, mix the yeast with the warm water and stir in sugar until dissolved.

Add the salt and the flour, one cup at a time.

Knead bread for about 5-10 minutes.

Place bread in a large bowl sprayed with olive oil spray and turn to coat. Cover with a damp cloth and place in(inactive/not hot) oven to rise for one hour, or until dough has doubled in size. (If the kids really can't wait, 45 minutes works too!)

Punch down the bread and let the kids shape it, or put it into two loaf pans. I recommend brushing with an egg mixed with a tablespoon of water because it makes the bread taste better and makes it golden and crispy on the outside. Let the dough rise for another half hour (you can skimp on this to 20 minutes again if you have to!). Preheat the oven to 400 degrees and bake for 25 minutes. Serve with margarine mixed with honey (about 2-3 tablespoons, to taste) and brown sugar (ditto, but packed). To store this bread, wrap very tightly in several layers of foil, or put in a large Ziploc bag and seal. But, it's best warm and served the same day -- however putting chunks in the microwave for 10 seconds if it's a day old helps, too. (Forgive me for my run-on sentences -- I am educated!).
